My BFF The Crock Pot


Did I mention that I'm not a very good cook?  I think I did.  My mom never really enjoyed cooking, so she didn't pass a lot of knowledge on to me.  Then I got married to a man that can make you cry, his food is so good.  Living with him, I haven't had much incentive to hone my cooking skills.  Plus, he's convinced that I can burn water.  Is that even possible?  Isn't that just steam?  

On the plus side, I do have some great recipes that I make really well, and I prepare them over and over. My absolute favorite thing to make is ANYTHING in the crock pot.  I love my crock pot so much, and we have become best friends.  My family is so busy during the week, and I love starting something cooking in the morning and coming home to a meal already done and smelling delicious.

Now that Spring is here, I suppose it's not really crock pot weather.  However, this recipe just makes me think of summer, and even the teenagers love it.  Plus, it's so simple, the chief water burner can make it!


Crock Pot Pulled Pork

2 yellow onions, sliced thinly
3 garlic cloves, sliced thinly
1 cup chicken broth
1 Tbsp dark brown sugar
1Tbsp chili powder
1 Tbsp kosher salt
1/4 tsp ground cinnamon
a few dashes of liquid smoke
1 5lb. pork shoulder (or pork butt)
BBQ Sauce

Layer the onions and garlic in the crock pot, and pour in the broth.  Mix the brown sugar, chili powder, kosher salt and cinnamon in a bowl.  Dry the pork with paper towels.  Rub the spice mixture over the entire pork and place it on top of the onions and garlic.  Cover and cook until tender, 6 to 8 hours on high or 8 to 10 hours on low.

Remove the pork from the crock pot and turn it off.  Strain the liquid/onion mixture and return the onions to the slow cooker, reserving the liquid.

Shred the pork into bite sized pieces.  Return the meat to the crock pot and mix to it with the onions.  Add 1/2 cup of the liquid (more if needed) until the pork is just moistened.  Serve on hamburger buns with your favorite BBQ sauce and some coleslaw.

  1. I just pinned this to my Easy Dinners board. I will try it next week. I love anything in the crock pot because when dinner time comes, the house smells good and there is very little work!

  2. I can totally relate Lana. I'm also not a good cook because my mom didnt have enough skills to pass on me. But because of modern technology, I am slowly learning. Thanks for this recipe....Happy Easter too!

  5. I love my crockpot. It can be a huge time saver. I don't think I've ever tried pulled pork in it though.
