Springlike Lemon Bars

Our unusual springlike weather (sorry East Coast) has me wishing for springlike food.  These Lemon Bars are a favorite of my husband's, and are so easy to make.  Perfect for a Superbowl party, or to give you a small taste of spring a few months early.  It's coming....hopefully sooner than later.

Lemon Bars

Mix together 1 C flour, 1/2 C butter and 1/4 C powdered sugar and press into the bottom of a 9x9" pan.  Bake for 20 minutes at 350 degrees.
Meanwhile, mix together 1 C granulated sugar, 2 eggs (slightly beaten), 1/2 Tbsp. flour, 1/2 tsp. baking powder and 2 Tbsp. lemon juice.
After crust has baked for 20 minutes, pour lemon mixture into pan and bake for an additional 25 minutes.
Garnish with powdered sugar and lemon zest.

Have a wonderful weekend.  I have to say it just one more time, I promise...
Go Seahawks!

  1. We're in the icy grip of winter, so I love seeing your header and dreaming of spring. I think I could use a lemon bar to cheer me up.
