Springlike Lemon Bars


Our unusual springlike weather (sorry East Coast) has me wishing for springlike food.  These Lemon Bars are a favorite of my husband's, and are so easy to make.  Perfect for a Superbowl party, or to give you a small taste of spring a few months early.  It's coming....hopefully sooner than later.


Lemon Bars


Mix together 1 C flour, 1/2 C butter and 1/4 C powdered sugar and press into the bottom of a 9x9" pan.  Bake for 20 minutes at 350 degrees.
Meanwhile, mix together 1 C granulated sugar, 2 eggs (slightly beaten), 1/2 Tbsp. flour, 1/2 tsp. baking powder and 2 Tbsp. lemon juice.
After crust has baked for 20 minutes, pour lemon mixture into pan and bake for an additional 25 minutes.
Garnish with powdered sugar and lemon zest.

  3. 2 T of Lemon Juice and that's it?? Ok I am making these.Thanks. My sister who lives in RI told me to "just shut up" when I mentioned the springlike weather we are enjoying. She wasn't kidding so I changed the subject quickly!

    1. Ha ha - so funny! Yep, just 2T of lemon juice. I add the lemon zest on top to add some extra flavor.

  9. Yes, I agree!!! I love lemon bars year-round. They always remind me of summer but boy do I Love to think about spring and Easter foods.
    The best. (as I look out at 14 fresh inches of snow)
