Last week I wrote about Washington Apples and how I still can't eat apple pie. My family loves cooked apples though - so once a year I make this for them. Add some vanilla ice cream and it's the perfect fall dessert (except for me - just give me a cupcake instead)!
Apple Krunch
6 apples, diced
1/2 cup sugar
1/2 tsp. cinnamon
3/4 cup sugar
1 tsp. cinnamon
1 cup flour
1 tsp baking powder
3/4 tsp salt
1 egg
1/3 cup melted butter
Mix first three ingredients together and spread evenly into square baking pan, or individual ramekins. For the topping, combine the sugar, cinnamon, flour, baking powder and salt, mixing well. Beat egg slightly and mix with dry ingredients. Cover apples with the topping and drizzle with melted butter.
Bake at 350 degrees for 35-40 minutes. Serve warm with vanilla ice cream.

DeleteMmmm! I rarely like baked apples.. which is strange because I love them so much raw. Anyway, I'd eat this and love it! It's the crunch.
